Simnel Cake

Fiona Floate shares a picture of the Simnel cake that she baked during Holy Week.

Speaking of her cake, Fiona said:

Simnel cake is a cake traditionally eaten at Easter.  It is a fruit cake (not as heavy as a Christmas cake) which has a layer of marzipan in the middle which makes it very moist.  

It is decorated with a layer of  marzipan on the top and 11 balls of marzipan around the edge to represent the 11 disciples left after Judas Iscariot had betrayed Jesus.  

Some people add fluffy chicks or bunnies in the middle but I didn’t have any in the house and thought they would not be deemed essential shopping if I went out to find some!
